This course will provide staff with additional knowledge about common medical conditions that are treated or managed by with a special diet. We will cover conditions such as diabetes, coeliac disease, food allergies and constipation to name a few. Caring for adults who are tube fed will also be included. In addition we will discuss different cultural diets and religious dietary laws. Menu evaluation and planning will be covered in order to explore how different dietary needs for medical, cultural or religious reasons can be met.

Learning objectives:
• Describe the key principles of special diets advised for the treatment and management of diabetes, coeliac disease, constipation and other medical conditions identified.
• Differentiate between Type 1 and Type 2 Diabetes
• Take a person centred approach plan how additional menu planning can improve the meal provision and enjoyment for clients on special diets.
• Recognise the emotional and psychological issues associated with restrictive diets
• Explain the dietary restrictions of different religions and cultures
