Nutrition – Special Diets – Cohort 4

This course is suitable for all levels of staff who are working in older people care services within residential, nursing or homecare environments.
During this course we will describe the special diets that are most commonly prescribed i.e weight reducing, gluten free, high fibre, lactose free. In order to adequately meet the dietary requirements of service users who are following a therapeutic diet emphasis will be on good menu planning and provision. This will ensure that diets are prepared and presented in a safe and accurate way providing variety and meeting preferences.
By the end of the course learners will be able to:
• Recognise and state the most common special diets followed by residents in care homes and those support by homecare staff in their own homes.
• Develop actions plans in order to improve the provision and understanding of the needs of service users on special diets through menu evaluation and planning
• Plan how to meet the dietary and nutritional needs of service users who follow specific diets for religious or cultural reasons
Learners will be expected to be engaged in learning, participate in all activities including group discussions, share their own experiences of working in the care sector, whilst respecting confidentiality, and to share best practice examples
A Onefile (e-portfolio) profile will be created on the learners behalf to support them in the completion of their course
